Wednesday Recipe Thread

Quick to Fix Turkey or chicken & Rice Soup
4 cup chicken broth
1 cup water
1/4 tsp dried Italian sasoning crushed
1/4 tsp black pepper
1 10 ounce package frozen mixed vegetables (2 cups)
1 cup instant rice
2 cups chopped and cooked chicken or turkey (2 cans of canned chicken)
1 14 1/2 ounce diced tomatoes undrained

1. In large saucepan or dutch over combine broth, water, Italain seasoning, & pepper. Bring to a boil.
2.Stir in mixed vegetables & rice. Return to boiling, reduce heat. Simmer, covered, for 8 to 10 minutes or until vegetables are tender. Stir in turkey or chicken & undrained tomatoes heat throughly.

*note if using ground chicken or turkey, you must brown it until throughly cooked all the way through. If you using a crock pot or slow cooker dump all the ingridents in crock pot, set on low, high, meduim and let cook.

McDonald's and Taco Bell but that is not unusual for us.

We ate the Boar's Head at the Hockey game. I have to stay its worth the over priced item you pay for. Yes, its a sub but its a fresh healthy sub. Dh and I usually spilt the sandwhich because we know one is too much for us to handle.

Wednesday Recipe Thread

Old Time Beef Stew from pg 63 of Better Homes and Gardens Simple Soups and Stews

Ingridents:
1 1/2 pounds of boneless, beef stew meat, cut into cubes 1 in
2 tablespoons cooking oil or olive or grapeseed oil
4 cups of water
1 large onion, sliced
2 cloves of garlic, minced or preminced garlic equals 2 tablespoons
2 tablespoons Worecestershire sauce
1 tablespoon lemon juice
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon blackpepper
1/8 teaspoon allspice
1 bay leaf
6 medium carrotts peeled and bias-sliced into 3/4 chunks
4 meduim potatoes , cut into 1 inch chunks
1 pound small white onions peeled and halved
1/2 cup cold water
1/4 cup all purpose flour
snipped parsley (optional)

1. In an 8 quart Dutch oven (i will be using a stew pot or skillet) cook all the eat at once in hot oil over meduim-heat for 15-20 minutes or until the meat is brown, stirring occassionally. Drain fat. Add 4 cups water, sliced onion, garlic, Worcestershire sauce, lemon juice, sugar, salt, paprika, pepper, allspice, and bay leaf to the dutch oven. Bring to a boil, reduce heat, simmer, covered for two hours, stirring occassionally. i will be using a crock pot, so, in about four hours after combining all the ingridents it will be ready for stage 2.

2. Stir in the carrots, potatoes and halved onions. Return to boiling, reduce. Simmer, covered for 30 minutes more or until meat and vegetables are tender. Discard bayleaf.

3.In a large screw-top jar combine the 1/2 cup cold water and flour; cover and shake until smooth. Add flour mixture to stew. cook and stire over meduim heat until thickened and bubbly. Cook and stir for 1 minute more. Season to taste with salt and pepper. Spoon stew into bowls. If desired, sprinkle each serving with parsley.

I dare this company to ship this product for free and let me keep it for free. Informericals are so decieving sometimes. For $120.00 that I do not have and my DH will not spend on something. I want to see if it really does what it says, blends, food processor, and juice in one. Plus, holds up to my clans demands of an every day life around here.

I need all three units, I won't deny that. Expect I can get a food processor/blender combo for $40.00 at wal-mart and a juice for $30.00 there too. Why would I pay $50.00 more dollars plus shipping when Wal-mart will ship it to the store for free? Uh?

Bullet company...can you answer me that?

Tuesday Product Review

So, my family made this kit Saturday. The dough once cooked had a delicious flavor but getting the dough to roll out and form a shape didn't do so well. they are rather expensive cookies. I wouldn't want to make them again.DH and I found the kit at Wal-greens. go use your $10.00 bucks on sugar cookie dough instead.

Monday Resturant Review

Let's start with unhealthy choices first.

Carl Jr's Burger joint...great burgers and fries by not healthy by any stretch though I truly wished I could try my friend's family burger shop in Utah. I think they would just totally blow everything else out of the water.

Domino's pizza: After receiving food poisoning to the utmost degree six years ago. We have stayed away from them in general. WE tried the one by our new house. It was delicious. If you haven't had the mushroom and cheese pizza. Its good.

Healthy choices:
A Place called the Anthem country club serves the best food the meat is generally very tender and their vegetables very fresh.

Paraside Bakery also has fresh made bread of all kinds, salads, soups, and the best tootin cookies around. Always, good food.

Shanghi chinese resturant: OMG the portions could feed the military with what they serve. its fresh and yummy. A definitely repeat place for us to eat. Now, their version of general tso chicken isn't at spicy as I am use to but their sweet and sour chicken and their chicken fried rice rocked out the world.

Okay, I am so full of rich food we don't typically eat. I don't know if I can move to make my stomach get rid of it by the time Christmas gets here.

Over the past three days, I have probably done at least 4-5 hours of shopping, walking, and errand running while my family was in town.

Wednesday Recipe Thread

This Recipe is expensive to make but sure does look good. What is it with magazines that think we need the most expensive recipe to actually cook healthy?

Beefy Sweet Onion Soup by Southern Living
1/4 cup butter
6 meduim size sweet oinons thinly sliced
3 tbsp all purpose flour
1 lb top sirlion sbeteak cut into 3/4 in. cubes
2 tbsp vegetable oil (use olive oil for a healhtier subtitue)
1/2 cup dry red wine
6 cups swanson beef broth (use 6 bullion cubes instead and make your own)
1 dutch oven or stew pot or crock pot once the onions and meat are cooked

melt butter in large dutch over or stew pot over medium high heat. Add onions and satue 20 to 24 minutes or until onions begin to carmelize and are very tender. Sprinkle with 1 tbsp flour, and stir gently. Remove from dutch oven or from stew pot. If from stew pot then place onions in crock pot.

Toss beef in remiain tbsp of flour. Cook beef in hot oil in dutch oven or in stew pot over meduim high heat for 6-to 8 minutes or until browned.

Add wine and broth, and stir to loosen particulars from bottom of dutch oven. If using crock pot /stew pot then add to stew pot then transfer to crock pot. add onions and any acculated juices to Dutch oven or switch to crock pot. Dutch oven bring to a boil then reduce heat to low, and simmer 30 minutes. Crock pot turn on high come back in about an hour or set on low and leave all day.

Meanwhile, preheat oven to 350 degrees. Bake bread slices on a jelly-roll pan to 8 to 10 minutes or until crisp and lightly toasted. Serve with soup.

Herbs Thyme, Rosemary, and Sage when used together in a pan of boiling hot water, then drained/strained carefully, sweetened with 2 tablespoons of sugar relieves, cough congestion for at least 6 hours..

I tried tonight in desperate relieve from allergy induced breathing problems. I give it a good 20 fingers/toes thumbs up. I took the tea/broth at 4 pm today. i am not disconnected nor feel weird like with most cough medicines. **another new best friend for me.

Wednesday Recipe Thread

Taco Soup from www.mightcool.com

1 to 1/2 meduim onion
green onions
1-2 lbs of meat
shredded cheese

1-2 cans pureed tomatoes
1-2 cans tomatoe sauce
1-2 cup beef stock or water
1-2pinto beans
1-2 cans corn
1 pkg taco mix
few tortilla chips
few olivies

chop both onions and green onions

brown meat and regular onion
add tomatoes, tomatoe sauce, water, beans, corn, and taco seasoning in soup or pasta pot. I put mine the crock pot for the entire day.

bring to a boil reduce to a simmer 15-30 minutes

Top each bowl off with corn chips (crushed up) sour cream a few sliced olives, green onions, and sprinkle of graded cheese

Okay...listen to your instict. Seriously, listen to it. Its a gift from God. If you sense something out of place or just not right then..try to figure out what it is.

Example: Today I got hit with this overwhelming feeling that the church we were going to visit today wasn't the church for us. First of all, I understand men in general feel the need to make the attempt to feel guests welcome but never pat the wife's back first or guide her even if you feel the need too. That is her husband's job. Secondly, some women might actually take you down martial arts style. Thirdly, omg...remember instict...yup..we got a hell fire and brimstone sermon. I know they are needed for those tittering on whither to choose God exists but to those coming in to visit your church, may see it differently. Even my DH who normally likes listening to this guy via ipod casts, didn't like today's at all. He won't say exactly what rubbed him the wrong way but it did. All I have to say, is that yes there will consquences for everyone's actions or nonactions but I think the biggest thing God likes for us to express is his undying love for all kinds of life. Forgive me, I felt no love in the church today. As in no God's love and understanding or forgiveness was absent. I almost physically puked right there in my seat. I don't know if it was from the lack of food, sleep, or down right God banging his hammer on my head saying get out of this church. Its not for your family.

So, it was decided we are not returning. I am sure normally the church is very loving to all members and visitors but something was amuck today. Was my instict on cue.

No Bake Engery Bars from the book cool Sweet & treats to eat by Lisa Wagner

Butter or oil for greasing pan
1 cup semi-sweet cholocate chips
1 1/2 cup rolled oats (oatmeal)
2 cups of rice cereal
1/2 cup flaked coconut
1/2 cup sesame seeds
3/4 cup peanut butter
3/4 cup brown sugar
3/4 cup maple syrup (pancake syrup)

1. lightly grease the bottom & sides of Baking pan with a small amt of butter or oil. Use a wad of wax paper to spread the butter.

2. Put the chocolate chips, oats, rice cereal, coconut, sesame seeds, & sunflower seeds in a large mixing bowl & mix together.

3. Put peanut butter, brown sugar, & maple syrup in a sauce pan. Use a rubber spatula to help peanut butter in & out of the measuring cup.

4. Place the sauce pan over medium heat & stir w/wooden spoon. continue to stir until everything is blended & brown sugar has dissolved.

5.Pour the hot mixture ove thdry ingridents in the mixing bowl & stir. Keep stiring until everything is completely blended.

6. Pour mixture into prepared baking pan. Use your clean hands to firmly pat the mixture into the pan.

7.Refrigate for at least 3 hours then use a large knife to cut the bars. These will be solid and difficult to cut, so ask for help.

VAriations:
use raisans instead of coconuts
substitue peanuts or almonds for sunflower seeds
try butterstotch chips instead of chocolate chips
extra nutrition 1/2 cup wheat germ

Okay, so, my nissan quest is in need of a new owner and repairs. So, we are car/vanSvu shopping.

So, I saw an ad in entertainment magazine for the the new crossover for gmc. I like it. I need a vechile that can hold 7 people to 8. I really need a tahoe or a suburan for when his family comes into town. The gas in those kill me every time.

Wednesday Recipe Thread

This is always fun...
Remy's Macroni & Cheese from the disney cookbook

1 lb elbow macroni, cooked according to package directions
butter for greasing the dish
3 cups half & half or whole milk
12 to 18 slices of american or cheddar cheese
12 ritz crackers
salt & pepper & paprika to taste

Heat the oven to 350 degrees & grease 13 x9 baking pan or large cassarole dish

Spoon a third of the cooked macroni into the pan, then pour in 1 cup of half & half or milk, & cover everything with 4 to 6 slices of the cheese. Add to more layers of pasta, half & half or milk, & cheese.

Place the crackers in a ziplock baggie and crush. Add salt and pepper, an papricka then sprinkle the crumbs on top of the past & cheese. Bake until bubbly, about 35 to 45 minutes, Makes 6 to 8 servings.

Cofee-mate seasonal creamers...

I got mine at my local wal-mart this past weekend. It was a $1.50 for a 16.0z. I have to say, it was wonderful to have a cup of coffee that didn't cost me all my limbs.

Its not as strong as the starbucks but it does hit the spot for me.

Wednesday Recipe Thread

There are two listed below. One for food and one for a vinegar based cleaner.

Gusteau's RAtatouille from Ratatouille-What's cooking in a cook book by Thomas Keller

1 large eggplant 4 small zucchini, chopped
1/4-1/3 cup olive oil, 1 onion thinly slice or chopped
4 tomatoes, chopped (alternative 1 can tomato paste, 1/4 cup ketuchup, and water mixed together until you have 2 cups)
Salt & Pepper to taste 1 red or green bell pepper chopped
1/3 cup basil (fresh chopped) or alternative dried season to taste
2-4 crush garlice cloves (alternative minced garlic 2-3 tablespoons)
Parmensan Cheese (shredded)

Salt Eggplant, drain in a colander for one hour and pat dry. Heat half of the oil in a large sauce pan or large skillet and briefly saute eggplant until brown, then add the onion and pepper. Next add the garlic, zucchini, and tomatoes. Cook until a soft stew has formed, about 15 to 30 minutes.

Add Salt and Pepper, and basil (I did this while it cooked not after). Sprinkle with the cheese and serve. You can freeze the left overs.

All Purpose Cleaner
one clean empty spray bottle
2 tablespoons vinegar
1 tsp borax
hot water
few drops of dishsoap
essential oil optional (found at health food stores or trader joe's)

Vinegar is my new best friend in cleaning just about anything. Seriously, ladies you don't need much of it to clean dishes by hand, use as jet dry in the dish washer, clean counters, and do windows. They never have looked so clean. i will post a recipe tomorrow for food and using vinegar. Plus, did you know that vinegar is known as a natural disinfectant. Unlike bleach base cleaners that germs get resistent too. The vinegar the germs aren't germ resistant because most people don't clean with it.

Try it...wash your dishes by hand, then fill the other sink with water and tablespoon of vinegar. When the dishes dry by air they will be streak free and sparkle.

It makes us look ugly, fat, unwanted, unloved, unkind, uncaring, without intrigity, and most of all inability to face ourselves in the mirror. Everything we strive not to be.

The last few days have been hell on me with aspects of family relationships. I have turned to the book "think like a lady but act like a man" by steve harvey, the house of night series by p c cast and daughter, and Kerrelyn Sparks books. Instead of allowing myself to get sucked into the vortex of the other person's jealous outrage or yelling spree. I have walked away. I have waited for them to be in a better frame of mind, and of course Karma. Its a .....I'll let you fill in the blanks at this point.

Even when confronted in a better mood this person in my life is in denial like the river the nile. I have determined that life will remain unpleasant until the life lesson this person is suppose to learn is learned.

I have learned to speak up with I feel this way about anything. Not just my displeasure in the situation but the feelings I feel and way. It has helped reduce the fire that is being kindled on the other side.

Sorry no real resturants here to review. Since we have been sick. The smell of most resturants have made everyone sick to their stomach.
I do have to say while at the hockey game DH broke down and got boar's sandwich with sea salt chips. OMG..it was the best roast beef sandwich i have had in a long time. DH earnes some more cookie points..unless you've read the book act like a lady think like a man..you won't get the inside joke.

Wednesday Daily Cailore and Minute Thread

Homemade chicken Soup by me...

1-2 cans of canned chicken
salt and pepper to your discretion for flavoring
4-6 cups of chicken broth
1 cup celery(diced really small)
1 cup carrotts (dice really small)
1 cup or can of mushrooms
1 box of pasta the non-egg noodle kind
olive oil

heat pasta pot or stew pot with olive oil, salt and pepper, vegetables just before they get tender 5-7 minutes, add chicken and continue sauting..until vegetables are tender. Add chicken broth your pot should be half full at this point.

Bring to a boil. Add pasta continue boil as directed on the box. Then let it simmer for approximately 20-30 stirring occassionally.

This receipe was created for a non-diary diet for my kid who can't have diary.

Wednesday Recipe Thread

Over the Top Apple crisp from the book cool Sweets & Treats to eat by Lisa Wagner

5-6 granny smith apples (peeled & de-cored)
juice of 1/2 a lemon I put 1/8 of cup of lemon juice instead
1/4 cup water
1/2 cup sugar
1 tsp of cinnamon
1 teaspoon
1/4 tsp salt (omit if you are using all purpose flour)
3/4 cup flour
1 stick of butter, cut into 8 pieces of 4-8 tablespoons of butter

1. Preheat Oven to 350 degreees
2. slice the pealed and cored apples in the baking pan. They might be highter than the top of the pan. don't worry. They will shrink as they bake.
3. Strain lemon from juice & mix it with water. Pour over the mixture evely over the apples
4. Put rest of ingredients in a large mixing bowl. Use your clean hands to rub the butter into the dry indgredients.
5.Sprinkle the mixture evenly over the apples but don't mix the two together.
6. Cover the pan loosely with aluminuim foil and put it in the oven. Bake for 25 minutes & remove foil. Bake for another 35 minutes, or until topping is brown.

We made this recipe this weekend. It was okay, it was missing something a spice. do you have an apple crisp recipe? check yours and find out what we missed by following the recipe. it was easy, it was quick to make with kids, but missing something.

The person that figures out what its missing gets fresh rosemary from me. No joke.

Monday Resturant Review

Okay, I am impressed while being made sick by raw hamburger from In and Out Burger Resturant chain. They are based in California. Let's give some background information first on the situation.

Its Saturday night, we skipped going to the diamondbacks game. We gave away $200.00 worth of tickets and parking pass to a friend. I hope they know what a freakin' deal they got. My Dh decided to "do something" nice since he had been acting like a jack rabbit who didn't get any for weeks. So, we order our food. One #1 double cheese burger combo; one #2 cheeseburger combo w/o the special mayo sauce with onions lettuce tomatoes, ketchup and mustard; two #3 burger combos. We chit chat beating around the bush of subject matter that might cause a fight in public. They call our order number #22. My Dh trying to redem himself of bad behavior gets our order. We make sure everyone has the right burger. We begin to dig in and eat our grub. I get this weird taste in my mouth, like I have raw meat without blood. Okay, let's look at burger. To my shock, my burger is only cooked half way through. I immediately put down the burger, ask Dh to take a peek. He comes to the same conclusion. We decide to say something to staff expect the staff seems overwhelmed already with complaints and having to redo orders. My Dh decides they already know about the mistake, we will just take to a higher level.

After putting my kids to bed including my over 40 year old DH. I am in full food poisoning mode. I can't sleep, or read. My stomach track is in full revolutionary mode. So, I look up the In and Out Burger corperate offices. I find contact us. I fill in my contact information with a very smart mouthed letter to which I referred to vampyres and in all; me not being one etc. This morning, while getting half of my family ready for the last baseball game of the season (its sunday while I type this), my phone starts ringing its "Super massive blackhole" by the muse ring tone. No id, Hmm, I took the chance by answering. It was the actual corperate customer service office, checking on me health status. I informed them that it went from the typical cramps and nausea to diaherria from eatting raw meat. I knew if I went to the doctor's office they would tell the me the same thing I knew bland food, liquids, lots of rest and no excerise. They generally seem to care and where very displeased that a customer ate a raw burger.
This is definitely, a change from previous corporate attitude of other food chains. Do I want anyone fried? No. I just don't want anymore raw burgers served.
I was disappointed in the food but not by the response of the corporate head quarters. Good job!

Will I will go back to In and Out Burgers..probably give a fews of recovery..

make your own laundry soap powdered
2 cups of ivory bar soap finely graded
1 cup of washing soda
1 cup of borax

mix well together. store in an air tight container. use tbsp per full load.

Sunday Quotes..

Trying to find a new church isn't easy. there are many things to consider, what type of theology are they teaching my kids, what type of people attend are they a facade or do they actual behave the teachings in every day life, and can I stay awake during the sermon.

Yes, I know its rude to doze in the sermon part however if the teacher knows how to teach a lesson of bibical truths in a manner that doesn't make me doze. Well, the lesson is learned and applied.

so, my dh and I disagree on a church to try. My spiritual guy says, hmmm don't think, so, not the church for me. My mind says, go it will shut him up. I over ride my mind and go with spiritual gut every time. God gave us that small still voice that will scream very loudly in different ways either "stop danger", "go help", or "pray right now right here". I've learned to listen. I have also learned to be still and do nothing at times because the small still radar voice detects nothing.

What's so funny is, that if Dh decides to proceed without listening to my warnings the family seems to get sick at the last minute and we don't get to attend. I can't help but feel sometimes having allergies or sickness maybe a blessing in disguise.

Yesterday I spent only $85.00 on two weeks of groceries for a family of four. Grant it, its not anything fancy to write home about. Its just pretty much I got everything i could on sale price matched at wal-mart and was very careful watching my prices on everything else.

Monday Resturant Review

anthem country club family pasta night: healthy, affordabale, and delicious definitely recommend it.

Wildflower Bread Bakery/Deli: Healthy but not our taste area. The crust on the bread was very difficult to chew, the salad was definitely something I would not try again cilantro and lavendar, and kids cookies...no gooooooooooooo

Tgif: Definitely a winner they had healthy and unhealthy choices, they had them marked with not only healthy but right portions as well. the waiter was extremely good not just with the adults but really listened to the kids. He made sure the kids food was cooked first and brought out first (very unusual but very good kept them from having a hungry break and chewing their fingers off while we wait).

Subs from the wal-mart deli: good but the bread on the sourdough was a bit tough chewing. We are a bread family love it and can't live without. The wheat bread perfect.

PF changs chinese resturant: Lunch plates perfect portions. If you order the fried rice then get ready to share your plate with others at the table. The portion was way too much for one person.

Streets of New York: Definitely a winner, they serve garlic bread mini rolls with dipping sauce as you wait for your food. Keeps the kids happy and allows for conversation between members of your dining party. We ordered the extra large, which was not necessary with the bread appreziter. We literarily have enough to eat tonight for dinner. Yeah, I dont have to cook. It wasn't as good as Europizza in Fh or Bill's Pizza Joint in Prescott but it was very tasteful with the feta cheese. YOu will get your money's worth out of the food.

Wednesday Recipe Thread

Burger Skillet by Kraft Family and food

Prep:5 total time 30 minutes

4 frozen hamburger patties 4 oz each (substitue 1 lb of ground turkey)
2 cups red, yellow, or green pepper strips
1 jar(26oz) spaghetti sauce 1/2 cup of water
2 cups of minute white rice uncooked
1 cup shredded low moisture Part skimmed mozzarella cheese

Cook hamburger/turkey meat in large nonstick skillet on meduim heat 10 minutes. Turn hamburger patties: add peppers. Cook until hamburger patties or turkey until well cooked. Peppers need to be crisp-tender, stirring peppers occassionally.
Add spaghetti sauce andwater bring to a boil. Stir in rice: cover. Reduce heat to low. Simmer 5 minutes. Sprinkle with cheese before serving. Makes 4 servings.

Okay we have used carpet deordorizer in ages until recently. the kids were always on the floor and young. So, this is a really nice lite smell that after you use it, you occassional catch a whif of the pleasant smell. You can reall see it when you vaccumm it up if you have a bagless vac.

Tuesday Product Review

This is the nokia xpress music cell phone.

I know its small but on so convient for on the go moms who don't want to carry their phones in their purse but in their pocket.

Its just not a phone. It has an ipod capabilities and a built in media function. You can take photos, and videos. it took me awhile to figure out how to use it in the media mode but once I did. I get sometimes better quality photos than with my point and shoot. The text keyboard I had to have a friend set up because frankly I couldn't figure out. I wanted a different type of phone because of all the texting I do however I can't complain for the other stuff it comes with.

yes, you can set music as your tones with this phone. You just have to have that particular song loaded on your phone.

It will sync with your computer's calendar on top of all that. So, looking for a new phone without all the bulkiness of the other phones this one is it.

I give it four stars in my book.

Even if you are not getting along with family, always remember their special days like anniversries, birthdays, christmas etc. It will show that no matter what they say or do, you still love them for who they are but not their behaivor. I know easier said than done but you can do it. You are the better person.

Example, today is my mil/fil 45th anniversry. I made a funny card and emailed it to them. They will appreciate the fact, my DH and I remembered and the fact they don't have to do anything physically to celebrate other than click a mouse to receive it.

Okay here is a sample of what our menu looked like this week.

Breakfast: dry cereal with milk, oatmeal

Lunch: Peanut Butter and Jelly sandwhiches with chips, and left overs from dinner lentils sauce and pasta trees and dirt.

Dinner:Potato soup with spinach salad, chicken catchatory left overs (frozen for later months), lentil and ground beef sauce with brown rice, pasta trees and dirt (ground turkey), and sandwhiches.

Snacks: crackers, bing cherries, green seedless grapes, chips, applesauce with raisans and left over blueberries, vegetables and dip

Drink: green tea (diet), sweet tea decaf, kool-aide, water

Wednesday Recipe Thread

Greek- Style Couscous Salad from the food and family magazine by Kraft foods spring 2004 pg. 43

1 cup whole wheat couscous, uncooked
1 cup halved cucumber slices
1 large tomato, chopped
1 pkg (40z) Crumbled Reduced fat feta cheese
1 tsp dill weed (optional)
1/2 cup light italian dressing (reduced fat or fat free dressing)

cook coucous as directed on package, omitting salt and butter. fluff with fork. place in large bowl; cool 10 minutes.

add remaining ingredients; toss lightly. cover.

refrigerate at least 1 hour to allow flavors to blend.

Makes about 6 servings, about 1 cup each.

calories 190, fat 6 grams (2 grams sat), sodium 420, carb 26 g, fiber 5 g, sugars 4 g, protien 9 g, dv vit a 10%, dv vit c 10%, dv calcuim 8%, dv iron 6%

I have never made this recipe. Though it does sound delicious. Have you made something similar? Do you have a better recipe. Lay it on me. I want to know and share with others.

I am currently working on a lentil recipe with ground turkey in it. If it works good then I may start working on a particle healthy easy cook book for busy families. Any one know of a good publishing company.

is from me and all the wonderful advice I got for my family situation this week. Let's look at some definition of words first.

Apprecitivie means having or showing appreciation.

Master means one having authority over another.

run (one's life) means to accompany as a valid obiligation or right.

All three words have three different meanings. When applying these words to your life they apply different actions. First all being apprecitive does not mean you let some one become a master or run your life. To show appreciation means you either cook a mean or make a card to say thank you. It does not mean you turn your life over to another person to allow them to be your master or run your life. They in turn need to see the difference .

If they can't not see the difference then it is them that have problem not you. After several days of feeling crap for being the adult in my family situation. Expect during our major fight. I have come to realize. It is not I that has the problem with my house, it is not I that has the problem with the way I like my house decorated it is them. They are trying to live their lives through me. Unfortunately, I did not ask nor give them permission to do that. So, I do have a right to be upset. For all dealing with a similar situation, maybe, just maybe this will help handle yours better than I have handled mine.

This the vaccumm, my dh and I bought this weekend. Every few years after the warranty expires all of our vaccumms start showing that we need a new one. We always have had a bissell. They are good. I really wanted a dyson this time because we have so much carpetting in our new house. We have to vaccumm every other day to keep our allergies under control. Well, a dyson is very expensive for a vaccum cleaner. So, we took a step down. i wasn't sure if the vaccum would work as adversited. I have to say it does..its a little more heavy than what I wanted but it does clean really good!
Hay bissell, I'd love free replacements on the hepa filters since I have had a vaccumm of yours for last few years. I like they really have been scanning the web for positive reviews on their products...

I cleaned on hands and knees for about two hours yesterday. Thank Goodness, there were no cameras around or anyone holding one. They might have gotten some really bad shots that could have qualified for most embrassing shots in any magazine. Talk about a thankful moment.

Yes, ladies cleaning does qualify as excerise because you are moving. Every hour of clean equals 200 hunderd calories.

21.05 minute run on tread mill for 1.53 miles. speed started at 4.0 then to 4.1 then I tried to run through the increase in speed and incline at 5.1. OMG!!! What was I thinking. Thank God for the side bars to hold on to while I pushed my brain into over load to make the rest of my body run that freakin fast!

Always double check your sales ads..you may find that one store is cheaper on an item than the other. If you shop walmart bring the ad with you as long as it is not using a store discount card like 4 for $10, they honor the sales price like grapes 79 cent per pound or a cantalope 49 for one etc.

If you have special dietary needs, research on how to make it at home instead of purchasing it premade.

No excerise yet today. i wanted to get up and run. Expect I was deep under the covers in rem realm of nightmares to the point that you taste touch and smell what is going on. The kind of nightmare that you know its a warning that something bad is going to happen but you can't put you finger on it.

My excerise will be consist of walking from vechile into stores, around stores, back to vechiles, unload vechile )back and forth(, back in vechile to then to one doctor appt, then to mcdonald's for lunch, then to another doctor's visit, then to another store..call dh tell him to get his you know what near us to help with more groceries..etc

Saturday Money Saving Tips

Okay if you have a Bashas' supermarket. They are doing a special from 12-5, depending on your time zone, that kids can come decorate a cake for their dad or granddads or uncles for $5.00. Definitely worth the cost, if I bought the mix, eggs, and the time to bake it decorate it, it defintiely would cost more than that.

So here is our menu for the week:

Cereal, pancakes, cheese toast or bagels

Lunch: left overs or sandwhiches

Dinner: Hamburger Helpers(trying to get rid of the remaining boxes), or macroni and cheese with saute tuna fish with seasonings, turkey sloppy joes, hot dog pizzas, chicken patty sandwhiches

snacks: salads, vegetable trays with fat free sour cream seasoned with ranch, fresh fruit, or ice cream (we're out of that)

drinks: water, decaf southern sweet tea, gatorade, kool-aide, or cokes/gingerale.

Wednesday Recipe Thread

From Rachel Ray's Cooking Rocks Page 82-83

Mini Shrimp Scampi and Angel Hair Pasta
1 pound angel hair pasta (we use whole wheat)
4 cloves of garlic (we use 2 tsp or 1 tbs of canned minnced garlic)
3 tbs butter
1 pound of baby shrimp count should be 300-500 count (found in the freezer section)
salt and fresh ground pepper
1 cup chicken broth (I make my own using chicken bullion cubes)
4 to 5 blades of chives, snipped with scissors (2 tbs)(cheaper to use freshy)
handful of parsley, flat-leaf , chopped or snipped (2 tbs) (we used jared)

Put a large pot of water over high heat and bring to a boil; add salt (I use chicken bullion cubes in the water salt and seasoning mixed in one). Cook pasta according to package directions, to al dente.

Meanwhile, smash garlic cloves with small pan; seperate out the skins and throw them away.

Heat a large skillet over medium heat. Add evoo and butter. When butter has melted into oil, add crushed garlic and cook two minutes. Add shrimp; and salt and pepper.
Cook shrimp unitl heated through, 2 or 3 minutes; add stock and raise heat to bring to a boil. When liquid boils, remove pan from heat and have teh GH (grown up helper) drain pasta and add to pan. Toss with shrimp, sauce, and the snipped herbs, Adjust seasonings and serve.

Will be fixing this tonight for dinner. I have no idea of the taste or if my clan will like it. I hope you do.

Tuesday Product Review

I love AJAX with alternative bleach. It really cleans stuff well. We have this weird fiber glass tubes that don't come clean with traditional comet powdered. Apparently, it absords grease like going out of style. So, with some recommending something with a degreaser, I tried AJAX out of deseperation. It worked and it didn't bother our allergies.

Friday Menu Day...

Okay, so what, our menu looks like for summer time is an increase in our grocery bill to a degree but not by much.

so lunches are generally sandwhiches, salads, and chips. I know chips aren't healthy but they do replace the need for salt in our diet from sweating in the desert heat.

Tuesday night is generally a toasted sandwhich or chicken patti sandwhich because that is my night to have a mommy time out.

Everything else usually gets planned around the kids activities or baseball games.

I will post a menu next week for you to see what I am talking about.

Wednesday Recipe Thread



Chicken Catch-a-tory Ravioli in cooking rocks for kids by Rachel Ray

3 cloves garlice skins on
2 tbsp extra virgin olive oil (twice around the pain in a slow stream)evoo
2 stems fresh rosemary
2 stems fresh thyme
1 cup presliced freshmushrooms (about 1/3 of a pound)(have GH slice for you
salt and fresh ground pepper
1 canned stewed tomatoes with peppers,onions, and celery 15 ounces
2 roasted red peppers from jar drained
1 cup tomatoe sauce
1 package chopped frozen spinach, defrosted in microwave and drain 10 ounces
6 cups chicken broth
3/4-1 pound chicken breast tenders no bone (1 package)
1 pound ravioli, any flavor
1 cup grated parmesan, parmigiano reggiano or romano chess to pass at the table
crusty italian bread or rolls to pass at table

**i used rosemary and thyme from a jar about 1 tsp to tablespoon (be sure to slightly crush the rosemary it cooks better); I used to cans stewed tomatoes; I omitted roasted peppers, I used one large can of mushrooms instead of fresh; I omitted the tomatoe sauce; I made my own chicken broth by boiling 6 cups of wateron the stove top and adding the right amount of bullion cubs to the water. I used garlic in a jar about 2 tsp***

Have your GH heat a medium soup pot (I used my pasta pan only pan I had in the house) at medium high heat. Place 3 cloves of garlic on cutting board and whack each clove with samll heavy frying pan. Pick out skins & chunk them in your garabage bowl. Have GH add evoo , 2 turns of the pan, to the soup pot. Throw int he smashed garlice and 2 stems of the rosemary and fresh thyme herbs. The leaves will fall off the stems andgive a delivious flavor to yoru special stew.

Add mushrooms too, and help stir as teh mushrooms cook 3-5 minutes. Season the 'shrooms up with sal and pepper as they are cooking.

Next, you or your GH can open the can of stewed tomatoes and add them to the pot. Use a sharp small knife to chop the roasted red bell peppers. Keep your fingers on the hand holding the peppers curled under so you don't chop off those fingers! You just want to cut up the peppers into pieces as big as your mouth; that's what they call bite size. Add the chopped up roasted red peppers and add 1 cup tomato sauce to th soup pot.

Put defrosted chopped spinach in a kitchen towel. Gather towl up and tist it to get the water out of the spinach. Squeeze the spinach over your garabage bowl until it stops dripping. Seperate spinach with your fingers and add to soup. Pour in chicken broth and stire the stew really slowly or it will slosh out of your pot! Have the GH cover the soup and raise the heat to high.

Have the GH cut up the chicken for you on a seperate plastic cutting board from the one you cut the vegetables on. Cut the chicken tenders into 1 inch pieces and add them to the stew. Tell the GH to go wash up right away with lots of soap and hot water including the board-so that raw chicken doesn't get on anything else in the kitchen or any other food. If you touched the raw chicken, you should wash up too.

When stew comes up to a boil again, add the ravioli and leave lid off. Cook stew until the ravioli is almost done about 5 minutes. Turn off the heat and let stew cool down a little bit. Have your GH serve up the setew and pass, cheese, and bread atthe table to go with it.

**Note I let the stew cook another 30 minutes on simmer after the 5 minute boil with ravioli in it***Then I let it sit on the stove with heat off about 15 minutes before serving. Everyone and mean everyone loved it and we had left overs****

My family of pecky eatters loved this recipe so much that we will be getting the ingridents this friday again. WE will be making it for his entire family to eat.
