Tuesday Product Review and Calorie/Minute Thread

Hmm..I really don't have any product to review this week. Since, I was out of commission for the weekend from having the flu. I do have an opinion about sales departments of companies that do it stuff. If you don't know if something can be done, don't promise the customer it can when for all purposes it can't be done hardware or software wise. You make your installers job a real pain in the neck and they hate coming for work. Instead do a consultation, then speak with your install department before openning your mouth to the customer.

Here are some great things to say, that won't make you sound like an idiot but still sound like you want their business.

Salesperson: I like that idea. Let me check with my install department to ensure that we can do that for you or we have a different solution for your company's that I am not aware of.

Salesperson: That sounds like something to do with progaming between to different programs. Let me check with install department to ensure that the progarms with work together and will work with the equipment you would like too.

How hard is it for the sales department people to say something with common senses to it. How about taking the installer with you during the purposal, so, if there are tech questions you have the word of mouth right there.

Since, I had the flu for the last three days of last week. My DH thought he would be a darlin' sweetheart and take us out to eat Saturday. We went to a place called chompies. We had eatten their before when his family was in town last year about this time. We really enjoyed the kosher food and no one got sick. So, he took us to a different location this time. Needless, to say the experience wasn't so great. Though the food tasted great it didn't agree with us. My kids and Dh were sick before we even left the resturant. When we checked out, they charged us for the kids extras on the menus when they advertised it for free. The waiter tried to correct it, his manager told him he would not change the bill. Then my DH called the manager over to the table to show him the adverstised menu. It got changed after the manager was proven wrong. All I can say, is the server was the only descent person in the joint that night. Our standing on the resturant was a 5 star but now for this location called the Paradise Valley Mall location. We won't be going back there ever. They now rate a 2-2 1/2 star at this location for food.

I picked up two cd's from the library yesterday. Alan Jackson and John Cougar Melloncamp. The Alan Jackson was not up beat enough to be considered motivating though my dh has "walked" of with it to his office until its due date.

The older works of John Cougar Mellencamp is definitely motivating. I love authority and rock usa song as well.

Wednesdaya Recipe, Calorie, and Minutes Thread

Better-for-you Turkey Meatloaf from Southern Living Magazine page 119

3/4 cup uncooked quick-cooking oats (oatmeal)
3/4 cup diced green bell peppers (we omitted this when we made it by mistake)
3/4 cup finely chopped onion
3/4 milk (omitted by accident)
1 large egg white, lightly beaten
1 tbsp worcestershire sauce
1 tsp salt
1 tsp yellow mustard
2 lb ground turkey meat (we used 1 lb)
1 lb ground reduced fat sausage turkey
1 (15.5 oz) can stewed tomatoes, with green peppers and onions, drained
1 1/2 tbsp brown sugar

1. Preheat over 350 degrees. Combine first 8 ingredients in a medium bowl. Add ground turkey and sausage; combine mixture just until blended, using hands. Place mixture on a lightly greased rack in aluminum foil-line broiler pan; shape mixture into 10 x 5 loaf pan. Top with stew tomatoes, and sprinkle with brown sugar.

2. Bake at 35o degrees for 1 hour and 35 minutes or until a meat thermometer inserted into thickest portion registers 165 degrees. Remove from oven; let stand 20 minutes.

Food diaries

You say what? That's not a product. It is if your family suffers from an unknown medical alignment known as food allergies. Even if you don't have food allergies, keeping a food/medicine diary is very important. I started one last fall for my children due to an unknown food allergy that gave one of them liquid diaherria off and on for over a month with over 10 lbs of weight loss. It has paid off. I am not going to stop doing because when I go to the doctor, I can say for sure when and how much medicine they were given and what time. I read an article while waiting in the waiting room of a mother who lost their child because it caught a staff infection from one of the health proffessional after a serious trauma. She advised that if they had kept their own notes, and insisted that the health care professionals washed their hands before touching their child she might be alive today.

Luckily, my pedicatrican's office always washs their hands before touching my children and were very pleased that I am keeping a food/medicine diary. They said if they ever get hospitalized it will come in handy.

Not only does one of my children have a presevative sensitivity but now the main trigger has been discovered. Red dye #40. The combination of the two makes my daughter extremely sick within an hour of digesting the stuff. I notified the doctor when I finally realized what it was by having written down this past week and weekend. It really is hard to have any type of sweets or frosting on Valentine's Day with it all contain's red dye #40.

Does your child get frequently ill? Are you looking at allergies or any other type of medical problem?

Grab a composition notebook. The kind we use to use in school for writing our essays in. If you have two children fold the page in half, write the date and day at the top, and one columm for each child. More than two you can figure out a way to use the notebook pages for each child.

Monday Resturant Review and minute/calorie thread

Okay, we werent' suppose to go out to eat for Valentine's day yesterday but guilt of a sick child's request leds us to eatting out..though I had full menu planned already..see http://meanmomdigitalproductions.blogspot.com for a complete commentary on this..

Pinata Neuva a local resturant about 10 minutes from our house. It wasn't crowded for lunch time on Valentine's Day that was surprising. It was small and nice atomsphere. The help quickly refilled our glasses of pop repeatedly without being asked or "flagged" down. In our family that gets you an automatic 5 on our scale. The chips and salsa were definitely hot, just enough salt and spice. That gives you another 1 point. We didn't wait too long for food for the kids order. That gives you another 1 point in our family. If the kids are eatting before the adults. Seriously, have you ever tried to eat your food when your kids need help. Not happening. Then our plates come out piping hot, huge a lots of food, the shells where some what over done but other than that..its great. Another 2 points, for 10 points total. So, would I go back. Yes, but I would order a la carte only..i seriously made myself sick on Mexican food.

Moving and excerise...don't laugh we relaxed and were couch potatoes..

Wednesday Recipe Thread and c alorie/minute thread

Easy Chicken Gumbo from Southern living p 104-106

1/2 cup peanut oil-I didn't use oil due to the fat contain in the drumsticks I threw in the crockpot
1/2 cup all purpose flour
1 cup chopped sweet onion
1 cup chopped bell peppers
1 cup chopped celery
1 1/2-3 tsp of cajun seasoning
2 tsp minced garlic
3 (14 oz) chicken broth used 3 bullion cubs and 6 cups of water
1/2 lb andouille sausage, cut into 1/4 thick slices-used smoke cocktail sausages instead
Okra Pilau-used plain okra
4 cups chopped chicken-threw 4 drumsticks in the crock pot instead

1. heat oil in large ducth oven over meduim heat; gradually whisk in flour, and cook, whisking constantly 5 minutes or until flour is chocolate colored. (do not burn mixture)

2. Reduce heatot meduim. Stir in onion and next 4 ingredients and cook, stirring constantly, 3 minutes. Gradually stire in chicken broth and sausage. Increase heat to meduim-high, and bring to a boil. Reduce heat to low, and simmer, stirring occassionally, 20 minutes.

3. Meanwhile, prepare Okra Pilau. Stir chicken into gumbo; cook stirring occassionally, 5 minutes. Serve with okra pilau.

Okay, I threw the bullion cubs, six cups of water, seasoning, cocktail sausage and drum sticks into crock pot cooked them over night. Will pull chicken out to de-bone, /throw chicken meat back in, along with vegetables. Cook all day..add rice about 15 minutes before I serve.

I hope my family likes this..Hurrah, great job Saints!

Okay, I have these decorated ponytail holders that a lot of my friends have suggested that I sell on ebay or ecsty shop. So, do you have a shop? Ebay or Ecsty? Is it user friendly, have you had any problems with it. Help me decide on what to do. What I would love to do is put one up on someone's shop to test the market to see if it sells or not. Though, I know that probably won't happen.

Red Robin Yum! Enough said..just like the commerical. They have a grea selection if you try to go health. I actually powered up this time. I ate chili chil cheese burger. The only thing I wish they did was come down on their lemonade mixes. They charge $3.99 but free refills. Ugh..that's high.

Saturday Money Saving Tips and calorie/minute thread

So, these past weeks, the grocery stores are having great money saving sales that you can stock your fridge and pantry with healthy stuff. If wal-mart won't price match its worth stopping at those stores first then dropping off groceries and going back to wal-mart for what they will price.
I got 32 oz coffee creamer for $1.50 (limit 2), more Breyer's ice $1.99 (limit 2 in store coupon), pistachos $2.99 16 oz (limit 2 in store coupon) etc etc..Though this week when we go its gonna be expensive trip. We're out of everything.

Thursday Motivating Music and Calorie/Minute Thread

Thursday motivating music will return new week..

Banana Bread Cobler
1cup self-rising flour
1 cup sugar
1 cup milk
1/2 cup butter, melted
4 meduim-size ripe bananas, sliced
streusal topping
vanilla ice cream

1. Preheat Oven 375 degrees. Whish together four and next 2 ingredients just until blended; whisk melted butter. Pour batter into lightly greased 11 x7 inch baking dish. Top with banana slices, and sprinkle with Streusel Topping.

2. Bake at 375 for 40 to 45 minutes or until golden brown and bubbly. Serve with ice cream.

Streusal Topping

3/4 cup firmly packed light brown sugar
1/2 cup self-rising flour
1/2 cup butter, softened
1 cup uncooked regular oats
1/2 cup chopped pecans

1. Stir together brown sugar, flour, and butter until crumbly, using a fork. Stir in oats and pecans.

Chicken Parmesan Pizza

1 (10 oz) package frozen garlic bread loaf
1/2 cup canned pizza sauce
6 deli fried chicken strips
1 cup (4 oz) shredded italian three cheese blend
2 tbsp chopped fresh basil

1. preheat oven to 400 degrees. Arrange garlic bread, buttered sides up, on a baking sheet.

2.Bake at 400 degrees for 8 to 9 minutes or until bread is lightly browned. Spread pizza sauce over garlic bread.

3. Cut chicken strips into 1/2 inch pieces, and arrange over pizza sauce. Sprinkle with cheese and basil.

4.Bake at 400 degrees for 8 to 10 minutes or until cheese melts. Serve immediately.

**subtitute the fried chicken for baked or broiled chicken.

Excerise zero..unless you count my vocal cords dealing with my kids yesterday they got a workout and a half.

**This post will be very long with lots of recipes. It will be continued into tomorrow's post as well.***

Stir and Roll Biscuits from Southern Living p 106

2 1/4 cups all purpose soft wheat flour

or self rising flour

1 tbsp baking powder (omit if using the self rising flour)

2/3 cup milk

1/3 cup vegetable oil or grapeseed oil or olive oil

wax paper



1. Preheat the oven to 475. Sift together first three ingridents. Stir in milk and oil, using fork until dough leaves the sides of bowl and forms a ball.

2.Turn dough out onto lightly flour wax paper; kneed 8 to 10 times, roll or pat down dough nto a 1/2 inch-thick rectangle (about 8 x 6 1/2 inches). Cut with a 2 inch round cutter, rerolling scraps as needed. Place 3/4 inch apart on a lightly greased jelly-roll pan.

3. Bake at 475 degrees for 10 to 12 minutes or until lightly brown.

Note: they used white lily all purpose soft wheat flour. I used gv or kroger's brand self rising flour. I also added a 1 tsp to make garlic biscuits. I used to much oil and they didn't rise correctly. In my oven 10 minutes burnt my biscuits. I may reduce the heat and let them cool longer like to 375 instead. My DH was happy I attempted to make homemade biscuits for him. he loves biscuits.

Our next recipes involve making your own frosting, cupcakes, and cookies. Thanks to TLC Cakeboss my kids want to make their own cakes and decorate them. heee..heee...guess what we can. These are just the basic recipes for doing it. So, it won't be like Buddy's stuff but it will come pretty darn close.

(basic cupcake batter)Bite-Size Sour Cream Pound Cake Cupcakes P87-89 Southern Living FEbruary 2010 issue
1/2 cup butter, softened
1/2 (8oz) package cream cheese softened
2 cups of sugar
4 large eggs
1 tsp vanilla extract
3 cups all purpose flour
1 tsp baking poser
1/2 tsp baking soda
1/2 tsp (8oz container sour cream desired buttercream or glaze)

Preheat oven. Beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in sugar until light and fluffly. Add eggs, 1 at a time, beating until blended after each addition. Stir in vanilla.

combine flour and next 3 ingredients. Gradually add to butter mixture alternately with sour cream, beating until blended. Spoon batter by rounded tablespoons into lightly greased miniature muffin pans.

Bake at 350 for 13 t o15 minutes or until a wooden tooth pick inserted in centers comes out clean. Cool in pans on wire racks for 5 minutes. remove from pans to wire racks, and cool completely (about 30 minutes) Spread cupcakes with desired buttercream, or dip in a glaze.
Note**if using self rising flour omit salt, baking powder, and baking soda. If not using a mini muffin pan you will not get 6 dozen.

(Basic Buttercream)Vanilla Buttercream:

1/2 cup of butter
1 (3 oz package cream cheese, softened
2 tsp vanilla extract
1 (16 oz) package powdered sugar.
3 to 4 tbsp milk

1. beat first 2 ingredients at meduim speed with an electric mixture until creamy.
2. Gradually add powdered sugar alternately with 3 tbsp of milk, beating at low speed until well blended and smooth after each addition.
3.If desired, beat in remaining 1 tbsp milk, 1 tsp at a time, until desired consistency.
Note**have not yet made this recipe but it looks yummy.

Lemon Butter Cookiess P 120 from southern living magazine february 2010
1 cup butter softened
1 tsp. lemon zest
1 cup powdered sugar
2 cups all purpose flour
1/4 tsp salt
Parchment paper
royal icing (recipe below)
colorful glaze(recipe below)

1.Preheat oven 325. Beat butter and zest at meduim speed with a heavy duty electric mixer until creamy. Gradually add sugar, beating well.

2. Combine flour and salt; gradually add to butter mixture, beating until blended. Shape dough into a disc.

3. roll dough to 1/8 inch thickness on a lightly floured surface. Cut with a 21/4 or 31/4 inch heart shaped cutter; place 1/2 inch apart on parchment paper lined baking sheets. If desired, cut 1 or 2 holes at top of each cookie(to hang or thread ribbon through after baking).

4.Bake 325 to 12 to 14 minutes or until edges are lightly browned. Cool on baking sheets 5 minutes. Transfer to wire racks; cool completely (about 20 minutes). Decorate as desired wtih royal icing and colorful glaze.
**note I think lemon zest is the peal of the orange grated finely. I have not made this recipe yet.

Royal Icing:

3 cups powdered sugar
2 tbsp meringue powder
1/4 cup cold water
food coloring paste

1. Beat first 3 ingredients at high speed with a heavy duty stand mixer, using whisk atachment, until glossy stiff peaks form. Tint icing with desired amoutn of food coloring paste, and beat until blended. Place a damp cloth directly on surface of icing (to prevent a crust from forming) while icing cookies.
**note I have a stand electric mixer but I don't have a whisk attachment. i don't know how I am going to make this one. If you know then leave a comment please!!

Colorful glaze

1 (16oz) package powdered sugar
food coloring paste

1. stir together powdered sugar and 6 tbsp water. tint glaze with desired amount food coloring paste, and stir until blended.

Purchase food coloring paste at a cake supply store or craft stores or supercenters.

Excerise was two hours yesterday..

40 minutes of 4 miles,
60 minutes of walking/sprints/and cross training
20 minutes of 2 mile walk back home.

I am soar but feel so good. It felt good to go move again normally.

Baby afodulphus (sp) this is the same stuff that is found in yogart that helps your tummy. Did you know that you can buy it seperately? Yup ask your pharmacist which brands are available without prescription, which ones require refridgration and which ones do. You can add it to your drinks, ice cream, and any other foods it can blend into. This keeps the lining of your stomach functioning properly. All, I have to say is my kids and I would be sick as a dog this past month without it due to the antiboditics. Why this instead of yogart? You get a box for estimated $10.00, you can mix it into any dish you are serving instead of having to eat yogart.

Have you ever tried to get a kids to eat yogart when they don't feel good? Then you know the mess, the aggreviation, and the overwhelming sense of frustration. This eliminates all that. I didn't know about it until I worked for the WIC program a few years ago. Let me tell you. Now, I get this every time that some has to take antiboditics in our house. Its a God sent help from heaven.

Monday Resturant Review and minute/calorie thread

Seriously, have you guys tried going to the grocery store instead of eatting out. So, here's the scenerio. My wonderful tired DH worked all weekend. Yes, I mean he didn't have a weekend at all. So, he calls up my kids without my permision and tells them we are going out to eat. I'm thinking Chili's or a nice pizza joint etc. We decide to go to Safeway Grocery Store. Yup. You got it. We hit their deli section. Dh and the oldest got sushi, the youngest and I got subway sandwich and italian pasta salad; to which the youngest would not share with me but her sister only. Go figure. Actually very healthy! We only spent $10.00 total including 5 bags of doritios of different flavors on sale for $0.99 with coupon and club card.

Excerise 20 minutes of cleaning.
