Saturday Money Saving Tips

Always double check your sales ads..you may find that one store is cheaper on an item than the other. If you shop walmart bring the ad with you as long as it is not using a store discount card like 4 for $10, they honor the sales price like grapes 79 cent per pound or a cantalope 49 for one etc.

If you have special dietary needs, research on how to make it at home instead of purchasing it premade.

Had a really hard time getting up today. I had a minor gallbladder attack from eatting a double cheeseburger yesterday. Not fun..

Friday Daily minutes or calories

No excerise yet today. i wanted to get up and run. Expect I was deep under the covers in rem realm of nightmares to the point that you taste touch and smell what is going on. The kind of nightmare that you know its a warning that something bad is going to happen but you can't put you finger on it.

My excerise will be consist of walking from vechile into stores, around stores, back to vechiles, unload vechile )back and forth(, back in vechile to then to one doctor appt, then to mcdonald's for lunch, then to another doctor's visit, then to another store..call dh tell him to get his you know what near us to help with more groceries..etc

Saturday Money Saving Tips

Okay if you have a Bashas' supermarket. They are doing a special from 12-5, depending on your time zone, that kids can come decorate a cake for their dad or granddads or uncles for $5.00. Definitely worth the cost, if I bought the mix, eggs, and the time to bake it decorate it, it defintiely would cost more than that.

So here is our menu for the week:

Cereal, pancakes, cheese toast or bagels

Lunch: left overs or sandwhiches

Dinner: Hamburger Helpers(trying to get rid of the remaining boxes), or macroni and cheese with saute tuna fish with seasonings, turkey sloppy joes, hot dog pizzas, chicken patty sandwhiches

snacks: salads, vegetable trays with fat free sour cream seasoned with ranch, fresh fruit, or ice cream (we're out of that)

drinks: water, decaf southern sweet tea, gatorade, kool-aide, or cokes/gingerale.

Wednesday Recipe Thread

From Rachel Ray's Cooking Rocks Page 82-83

Mini Shrimp Scampi and Angel Hair Pasta
1 pound angel hair pasta (we use whole wheat)
4 cloves of garlic (we use 2 tsp or 1 tbs of canned minnced garlic)
3 tbs butter
1 pound of baby shrimp count should be 300-500 count (found in the freezer section)
salt and fresh ground pepper
1 cup chicken broth (I make my own using chicken bullion cubes)
4 to 5 blades of chives, snipped with scissors (2 tbs)(cheaper to use freshy)
handful of parsley, flat-leaf , chopped or snipped (2 tbs) (we used jared)

Put a large pot of water over high heat and bring to a boil; add salt (I use chicken bullion cubes in the water salt and seasoning mixed in one). Cook pasta according to package directions, to al dente.

Meanwhile, smash garlic cloves with small pan; seperate out the skins and throw them away.

Heat a large skillet over medium heat. Add evoo and butter. When butter has melted into oil, add crushed garlic and cook two minutes. Add shrimp; and salt and pepper.
Cook shrimp unitl heated through, 2 or 3 minutes; add stock and raise heat to bring to a boil. When liquid boils, remove pan from heat and have teh GH (grown up helper) drain pasta and add to pan. Toss with shrimp, sauce, and the snipped herbs, Adjust seasonings and serve.

Will be fixing this tonight for dinner. I have no idea of the taste or if my clan will like it. I hope you do.

Tuesday Product Review

I love AJAX with alternative bleach. It really cleans stuff well. We have this weird fiber glass tubes that don't come clean with traditional comet powdered. Apparently, it absords grease like going out of style. So, with some recommending something with a degreaser, I tried AJAX out of deseperation. It worked and it didn't bother our allergies.

Friday Menu Day...

Okay, so what, our menu looks like for summer time is an increase in our grocery bill to a degree but not by much.

so lunches are generally sandwhiches, salads, and chips. I know chips aren't healthy but they do replace the need for salt in our diet from sweating in the desert heat.

Tuesday night is generally a toasted sandwhich or chicken patti sandwhich because that is my night to have a mommy time out.

Everything else usually gets planned around the kids activities or baseball games.

I will post a menu next week for you to see what I am talking about.

Wednesday Recipe Thread



Chicken Catch-a-tory Ravioli in cooking rocks for kids by Rachel Ray

3 cloves garlice skins on
2 tbsp extra virgin olive oil (twice around the pain in a slow stream)evoo
2 stems fresh rosemary
2 stems fresh thyme
1 cup presliced freshmushrooms (about 1/3 of a pound)(have GH slice for you
salt and fresh ground pepper
1 canned stewed tomatoes with peppers,onions, and celery 15 ounces
2 roasted red peppers from jar drained
1 cup tomatoe sauce
1 package chopped frozen spinach, defrosted in microwave and drain 10 ounces
6 cups chicken broth
3/4-1 pound chicken breast tenders no bone (1 package)
1 pound ravioli, any flavor
1 cup grated parmesan, parmigiano reggiano or romano chess to pass at the table
crusty italian bread or rolls to pass at table

**i used rosemary and thyme from a jar about 1 tsp to tablespoon (be sure to slightly crush the rosemary it cooks better); I used to cans stewed tomatoes; I omitted roasted peppers, I used one large can of mushrooms instead of fresh; I omitted the tomatoe sauce; I made my own chicken broth by boiling 6 cups of wateron the stove top and adding the right amount of bullion cubs to the water. I used garlic in a jar about 2 tsp***

Have your GH heat a medium soup pot (I used my pasta pan only pan I had in the house) at medium high heat. Place 3 cloves of garlic on cutting board and whack each clove with samll heavy frying pan. Pick out skins & chunk them in your garabage bowl. Have GH add evoo , 2 turns of the pan, to the soup pot. Throw int he smashed garlice and 2 stems of the rosemary and fresh thyme herbs. The leaves will fall off the stems andgive a delivious flavor to yoru special stew.

Add mushrooms too, and help stir as teh mushrooms cook 3-5 minutes. Season the 'shrooms up with sal and pepper as they are cooking.

Next, you or your GH can open the can of stewed tomatoes and add them to the pot. Use a sharp small knife to chop the roasted red bell peppers. Keep your fingers on the hand holding the peppers curled under so you don't chop off those fingers! You just want to cut up the peppers into pieces as big as your mouth; that's what they call bite size. Add the chopped up roasted red peppers and add 1 cup tomato sauce to th soup pot.

Put defrosted chopped spinach in a kitchen towel. Gather towl up and tist it to get the water out of the spinach. Squeeze the spinach over your garabage bowl until it stops dripping. Seperate spinach with your fingers and add to soup. Pour in chicken broth and stire the stew really slowly or it will slosh out of your pot! Have the GH cover the soup and raise the heat to high.

Have the GH cut up the chicken for you on a seperate plastic cutting board from the one you cut the vegetables on. Cut the chicken tenders into 1 inch pieces and add them to the stew. Tell the GH to go wash up right away with lots of soap and hot water including the board-so that raw chicken doesn't get on anything else in the kitchen or any other food. If you touched the raw chicken, you should wash up too.

When stew comes up to a boil again, add the ravioli and leave lid off. Cook stew until the ravioli is almost done about 5 minutes. Turn off the heat and let stew cool down a little bit. Have your GH serve up the setew and pass, cheese, and bread atthe table to go with it.

**Note I let the stew cook another 30 minutes on simmer after the 5 minute boil with ravioli in it***Then I let it sit on the stove with heat off about 15 minutes before serving. Everyone and mean everyone loved it and we had left overs****

My family of pecky eatters loved this recipe so much that we will be getting the ingridents this friday again. WE will be making it for his entire family to eat.

Yummy but not to healthy. You want some country style nibbles and grits with great musical atompshere then you'll get it. Yes, they have a bar in the shape of a guitar with a stage for live music. Yes, there is memorbilia on the walls. Yes, they have a hugh steak that you can order. Yes, they have a small section for healthy choices. Did I like it? Yes, its was great. What a belly ache I had from it when I left!

OKay, I love the place. Even if you order say, a hamburger, you can get a whole grain bun instead of a regular white bun. Outside scenes are beautiful. Its a drive to get down there if you are traveling from any where but Gilbert. You won't be disappointed.

They grow everything there. Its really good.

Wednesday Recipe Thread

Quesadilla Pizza by cooking rocks for kids by Rachel Ray Page 74



8 large flour tortillas (10 in)
2 1/2 cups shredded cheddar cheese (one 10 oz sack, preshredded available in diary section)
1 cup of salsa, red or green, mild or hot
3/4 brick of smoked cheddar or pepper jack cheese
1/2 cup green olives & pimentos drained
3 scallions ut up with kitchen scissors or chopped into small pieces
8 oz chorizo or linguica sausage (available near kielbas in meat deparment), thinly slice or drained.

Preheat oven to 400 degrees Take out two non stick cooking sheets. Place 2 tortillas on each cookie sheet, one next to each other. Top each tortilla with lots of cheddar cheese. Place another tortilla on top on each cheese covered tortilla. Put the tortillas in the oven and bake 5 minutes.

Take them back out fo the oven using pot holders. Press the tortillas down a bit with a spatula to set thm in place with melted cheese. Top each cheese quesadilla with some salsa, a sprinkle of smoked cheddar or pepper jack cheese, olives, pimentos, scallions, and some thin slices of chorizo or linguica. Put the pizzas into the oven and cook until edges are brown and crisp and cheese melted on top, 5 or 6 minutes more. Take the pizzas out and transfer 1 whole pizza onto each dinna plate and serve.

***We left out the olives. We substitued the choriza or linguica for ground turkey meat seasoned with taco seasoning****

My entire family gave this recipe a thumbs up. We ate this recipe for two meals in one day.
