Wednesday Recipe Thread

This week's recipe comes from Cooking Rocks by Rachel Ray 30 minute meals for kids to help cookfrom Pgs 36-37.

Pasta and Trees

1 pound broccoli
salt and freshly ground black pepper, to taste
1 pound pasta: Penni, rigate, corkscrew, cavatapp1, elbows, or macaroni shells
1 tablespoon extra-virgin oil (evoo)
1 cup grated Parmesan, parmigiana reggiano, or Romano cheese

Have your GH (grown up helper) put a big pot of water on to boil for the pasta.

Separate the broccoli into small trees by pulling them apart. Ask your GH to trim off the woody strems of your trees so you can break them up right. Put the broccoli florets (trees) into a pot and have the GH add water enough to just cover the tops. The GH should bring the water to a boil and add 4 pinches salt to the water; you can count for them. Cook the broccoli 5 minutes and have GH drain it.

When pasta water boils, have GH put 4 pinches of salt into the pot and add pasta. Cook to all dente (that's Italian for "done but still with a bite to it"), according to the package directions.

Put evoo and butter in a large bowl. Have the GH add hot drained pasta and broccoli to the bowl. Add the cheese to the bowl and stir it all up until the butter melts and the cheese mixes in. Add a little and pepper and taste the pasta and trees to see how the seasoning is.

Substitute the salt in the pasta for chicken bullion on cube. It has just the right amount of salt in it and adds extra flavor.
